Ingredients
- 500g chicken breasts, cut into cubes
- 1 pineapple, peeled and diced
- 1 red bell pepper, diced
- 1 red onion, sliced
- 2 cloves of garlic, minced
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the chicken cubes with soy sauce, cumin, paprika, salt, and pepper. Let it marinate for 15 minutes.
- In a large skillet, heat olive oil over medium heat. Add the marinated chicken and cook until browned on all sides, about 5 minutes.
- Add the minced garlic, red bell pepper, and red onion to the skillet. Cook for another 5 minutes until the vegetables are softened.
- Stir in the diced pineapple and cook for an additional 5 minutes, allowing the flavors to combine.
- Adjust seasoning with salt and pepper if needed. Remove from heat.
- Serve the Caribbean Pineapple Delight hot, garnished with fresh cilantro. Enjoy!
