Ingredients

  • 500g chicken breasts, cut into cubes
  • 1 pineapple, peeled and diced
  • 1 red bell pepper, diced
  • 1 red onion, sliced
  • 2 cloves of garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the chicken cubes with soy sauce, cumin, paprika, salt, and pepper. Let it marinate for 15 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the marinated chicken and cook until browned on all sides, about 5 minutes.
  3. Add the minced garlic, red bell pepper, and red onion to the skillet. Cook for another 5 minutes until the vegetables are softened.
  4. Stir in the diced pineapple and cook for an additional 5 minutes, allowing the flavors to combine.
  5. Adjust seasoning with salt and pepper if needed. Remove from heat.
  6. Serve the Caribbean Pineapple Delight hot, garnished with fresh cilantro. Enjoy!
