- 3 ripe pears, peeled and diced
- 3 mandarins, segmented
- 1 orange, zested and juiced
- 200g all-purpose flour
- 150g granulated sugar
- 100g unsalted butter, softened
- 3 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 100ml milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 23cm round cake pan.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the orange zest, vanilla extract, and orange juice.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk until just combined.
- Fold in the diced pears and mandarin segments gently until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Serve with a dusting of powdered sugar or a dollop of whipped cream if desired.
