Ingredients

  • 3 ripe pears, peeled and diced
  • 3 mandarins, segmented
  • 1 orange, zested and juiced
  • 200g all-purpose flour
  • 150g granulated sugar
  • 100g unsalted butter, softened
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100ml milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 23cm round cake pan.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange zest, vanilla extract, and orange juice.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk until just combined.
  7. Fold in the diced pears and mandarin segments gently until evenly distributed.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. Serve with a dusting of powdered sugar or a dollop of whipped cream if desired.
